Tomato Cucumber Salad

A good tomato salad is mostly about the tomatoes, so use the ripest ones you can find. Out of season? Cherry or grape tomatoes are usually sweeter than large ones in winter months.

Salting the tomatoes and cucumbers for ten minutes draws out their juices, and those juices become part of the dressing. Soaking the sliced onion in cold water takes away the sharp bite so it adds flavor without overpowering everything else.

Method

  1. Place the sliced onion in a small bowl of cold water for 5 minutes, then drain well.
  2. Put the tomatoes and cucumbers in a large bowl, sprinkle with the salt, and leave for 10 minutes.
  3. Add the drained onion, olive oil, vinegar and oregano. Toss gently so the tomatoes do not break up.
  4. Taste and adjust with pepper or a little more vinegar. Top with feta and fresh herbs and serve with crusty bread to mop up the juices.
Allergen note: Contains dairy if you add feta. Always check ingredient labels for your own needs.
